Pan-Fried Bannock
This is a little bit of Southern heaven! Get out your cast iron skillet and let the kids fall in love with pan-fried bannock.
3 cups all-purpose flour
2 tbsp. baking powder
2 tbsp. sugar
1 tsp. salt
2 cups water
Dry mix all ingredients in a large bowl and then slowly add water ½ cup at a time. You want the mixture to achieve a thickness somewhat heavier than pancake batter. Preheat the cast iron skillet with ¼ inch of oil and spoon the dough in the pan in 3 inch rounds about ½ inch thick. Fry until golden brown on the bottom; flip once to brown the top. Brush liberally with butter or margarine and serve with apple butter or maple syrup. Oh, my goodness!
